Chewy Chocolate Chip Cookies

There are times when you just have to indulge that sweet tooth with something chewy and chocolatey. Now you can. This recipe originally called for 1 cup of brown/white sugar. I’ve reduced this by half.

Chewy Chocolate Chip Cookies

There are times when you just have to indulge that sweet tooth with something chewy and chocolatey.

Ingredients

Blend Together:

  • 1/2 cup coconut palm sugar (organic)
  • 1/4 cup coco monkey organic sweetener
  • 1 cup butter (organic, softened)
  • 1 egg (pastured)

Add to creamed mixture:

  • 1 Giddy Yoyo Raw Organic Chocolate Bar (chopped up, I used 89% XDark)
  • 1 cup coconut flakes (organic)
  • 1 cup flour (I use Bob's Red Mill Gluten Free 1:1)
  • 2 cups rolled oats
  • 1/4 teaspoon mountain salt
  • 1 teaspoon baking soda (alum-free)

Directions

Step 1
Drop small spoonfuls of dough onto an ungreased cookie sheet about an inch apart. The dough will flatten and spread.
Step 2
Bake at 350F for 10 minutes. Allow to cool on cookie sheet before removing.

Note

Makes about 36 cookies.
